Storing Chocolate

Compound buttons do not like moisture. Keep your buttons in a cool (not the fridge) and dry place in an airtight container. Buttons have a long shelf life, however, it is best when stored in an airtight container and used within a year. Sometimes the buttons develop a white “bloom” on its surface if it gets too warm or too cold. Bloom occurs when the oils separate and rise to the top giving the buttons a white film. The bloom is harmless and does not affect the taste of the buttons. Remelt the buttons and stir well and use as normal.

Recycle Chocolate

Any melted chocolate left over can be re-used, even the bits that fall off the mould when inverted.

Care of Moulds

DO NOT wash moulds in the dishwasher. Wash moulds in warm water only (no soap) and dry thoroughly with paper towels. If you do want to use detergent, make sure you rinse thoroughly. There is no need to grease moulds for chocolate making. When set, chocolates will come out easily. When not in use, store moulds flat in a resealable bag to keep them clean and dust free.
