Chocolate Mousse Centre

Ingredients:  makes 250g

90g dark chocolate

10ml water

20ml liqueur or rum

50g castor sugar

1 egg white

130ml cream

Melt chocolate click here for help.

Add water and liqueur, stirring well.  Remove from heat.  Whisk in the sugar and beat until dissolved.  Whip egg til stiff.  Lightly whip the cream.  Fold the white and cream carefully into the chocolate mixture.  Spoon into prepared chocolate moulds before setting.  After the mousse has set, seal the chocolate.
