Coconut Ice

Coconut Ice makes a great soft centre for chocolates or dip the coconut ice in melted chocolate for a mega sugar hit!

Ingredients:

220g Shredded Coconut

4 cups Icing sugar

1 tin sweetened condensed milk

1 teaspoon vanilla essence

Pink food colouring

Mix all ingredients except for the colouring. 

Divide the mixture in half.

Evenly press one half of the mixture into a foil lined slice tin

Add colouring to the other half, kneading the mixture to spread the colour

Press the pink mixture onto the white layer

Refrigerate to set, then cut into squares or other desired shape
