Easy Marshmallow
Ingredients:
1 heaped tablespoon gelatine
3 tablespoons water
250g sugar
125ml boiling water
125ml cold water
Half a teaspoon vanilla essence
Dissolve the gelatine in the 3 tablespoons of water. Dissolve the sugar in the boiling water and then add the cold water. Allow to cool and then place in a large bowl. Add the liquid gelatine mix and beat on high speed until thick and glossy. This can take up to 20 minutes. Beat in the vanilla essence. Line the bottom of a 28 x 18cm tin with greaseproof paper and pour in the thick marshmallow. Allow to set in the refridgerator, run a knife around the tin to release the sides, and invert to release the marshmallow onto a wet bench. Cut as desired. Dip in chocolate or use as a centred chocolate.
