Marzipan

Ingredients:

250g Almond meal

500g Soft Icing Sugar

2 x 60g Egg Whites

Almond essence or oil

Sift the icing sugar and add the almond meal.  Beat the egg whites lightly.  Combine with the dry ingredients and add the flavouring.  Knead to a smooth firth paste.  Add extra icing sugar if the paste is too sticky.  Store in an airtight container.  Note:  Marzipan can be coloured and flavoured.  To make marzipan balls, work ground nuts or minced fruits into your mixture.  Form into balls, dip in chocolate or use as a filling for centred chocolates.
